Pilpel's story begins with Uri Dinay's grandfather, who ran a falafel stand in Tel Aviv for over 60 years. The recipe, made from 100% chickpeas, fresh spices, and herbs, without the addition of flour, was passed down to Uri, who opened the first Pilpel on Brushfield Street in Spitalfields on 5 May 2009. The name "Pilpel" means "chilli pepper" in Hebrew - the nickname Uri's grandfather gave him as a child because he thought he had fire in his spirit. That same fire lives on in every dish Pilpel serves today, and now it's coming to London's workplaces for the first time.
