A ramen chef said this to Tonkotsu founders Emma and Ken in 2012 after they first went to Japan. Since that conversation, Tonkotsu make all their noodles fresh every day - and that's not all. Their broths, katsu curries, gyoza and sides are made from scratch, so you can rest assured that their heart and soul goes into every bowl.

Our menu favourites are the Tokyo ramen, with an umami chicken broth and soy sauce base. It comes with classic noodles, sweet-marinated braised pork belly & bamboo shoots. Alongside the ramen, we'd recommend the shiitake mushroom and bamboo shoot gyoza - these veggie delights are steamed on top with a crispy base.
